    Cranberry Pumpkin Muffins

    In a blender, combine the following wet ingredients:

    2 cups pumpkin puree 3 egg whites and 1 whole egg 5 dried plums (prunes) 1 3/4 cup pineapple (chunks or crushed) 1/2 cup pure maple syrup


    Combine the following dry ingredients:

    3 cups whole wheat flour 1/2 cup ground flax seed 2 tsp baking soda 3 tsp pumpkin pie spice 1/4 tsp sea salt (regular would be fine, too)


    Pour wet ingredients over the dry and combine.

    Fold in the following:

    1 cup sliced almonds 1 1/2 cup chopped fresh cranberries


    Spoon into muffin tins, filling cups nearly full. Bake at 350 for about 25 minutes. Makes 24 muffins.


    123 calories / 1 g fat / 3.5 g fiber / 4.2 g protein / 23.8 g carbohydrates / 8.4 g sugar
